This recipe is what I am having for dinner tonight. Actually, I am eating forkfuls of this as I type in the recipe. It is not really a recipe, more like a guiding light to help you enjoy the taste I am currently savoring. The big flavor in this salad is the pomegranate molasses. I feel like I just made a new friend just by trying this molasses tonight. I had heard of it but never tried. So a couple of weeks back, I bought in the hopes that I would use it soon. I am so glad my lazy self finally decided that it was too hot to cook because the pomegranate molasses packs a punch.



Pomegranate molasses is a prominent player in Middle Eastern cuisine. According to the many sources I have seen on Google, it is simply just a reduction of the pomegranate juice. The thing about reduction is that it allows subtle flavors in food to become more noticeable. Drinking pomegranate juice or using it in a salad dressing I might not notice the layers of sweet, bitter and slightly tart that comes across in the molasses. I played up the dichotomy in sweetness and bitterness by adding in fresh raspberries into the mix. The fruitness of the fresh raspberries definitely plays well against the heaviness of the molasses. (Now, I feel really pretentious writing this review but it can't be said any other way.)

Raspberry Pomegranate Salad

Ingredients (serves 1)
2 Cups of Spring Mix Salad Greens
6 Oz. of Fresh Raspberries
1 Oz. of Herbed Fresh Goat Cheese
1 Tsp of Pomegranate Molasses
1 Tsp of Olive Oil

Instructions

1. Given that this a recipe for a lazy day/evening, add the pomegranate molasses and olive oil into the bowl you intend to use for eating. Mix it with a fork.

2. Add in half of the raspberries onto the pomegranate-olive oil mix. Crush the raspberries with hands. If this is too messy for you, use a fork.
3. Add in the salad greens on top of the crushed raspberries mix. Toss greens into the dressing with clean hands reaching to the bottom of bowl to distribute dressing evenly.

4. Crumble the goat cheese on the salad and sprinkle the remaining fresh raspberries on. Enjoy.
